Chilli Bites vs Droëwors: Which South African Stick Should You Grab?
PublishedChilli bites vs droëwors: chilli bites are thin strips of whole-muscle beef, cured like biltong, coated in chilli and dried hard. Droëwors is minced beef and fat, spiced with coriander and clove, stuffed into a thin casing and air-dried as a sausage. One is lean, sharp and hot. The other is rich, warm-spiced and snappy.
On a South African biltong counter they sit side by side, they are roughly the same shape, and newcomers assume they are the same thing in two colours. They are not. One came from a steak. The other came from a grinder.

What is the difference between chilli bites and droëwors?
Start with the meat, because everything else follows from it.
Chilli bites are biltong. Lean silverside or topside is cut into thin strips with the grain, cured in vinegar and salt, seasoned with coriander and chilli, and hung to dry. You can see the muscle fibres when you bite one. The full story is in what are chilli bites.
Droëwors is a sausage. Beef and fat are minced together, seasoned with the boerewors spices, stuffed into a casing and dried. No visible grain, a richer mouthfeel, and a warm clove note that chilli bites do not have. More in what is droëwors.
Which is spicier?
Chilli bites, every time, because heat is the point. Plain droëwors is not hot at all. The warmth from clove and black pepper is aromatic, not fiery. Chilli droëwors exists and can be properly hot, but even then the fat cushions it. Lean chilli bites have nothing in the way.
Which is healthier?
Chilli bites are leaner, because they are whole-muscle beef with the fat trimmed off. Droëwors has fat mixed in by design: a study of 20 commercial South African droëwors found 26% to 33% fat by weight, although US-made versions are often far leaner.
The catch with chilli bites is what goes on them. Many commercial chilli bite spice mixes contain MSG, and some contain sugar. Traditional droëwors usually has neither. So the lean one is not automatically the clean one. Read the label. The droëwors numbers are in is droëwors healthy.
Which tastes better?
Wrong question, but here is how South Africans split:
- Pick chilli bites if you like jerky but want it beefier, drier and hotter, or if you snack on spicy things while watching sport.
- Pick droëwors if you like salami, summer sausage or a good beef stick and want something with more depth and less sugar.
- Pick both if you are putting out a board, packing for a road trip or have ever been to a South African braai.
Which lasts longer?
Chilli bites. They are lean and dried hard, so there is little moisture or fat to go wrong. Droëwors has fat, and fat goes rancid with time and air, so eat an opened bag within days or move it to the fridge. Storage details are in how to store droëwors.
Where do biltong sticks and stokkies fit?
Stokkies, also called snap sticks, are chilli bites without the chilli: thin whole-muscle biltong dried until it snaps. So the family runs biltong, then stokkies, then chilli bites, all on the whole-muscle side, with droëwors as the sausage cousin. The full map is in South African meat sticks, and stokkies get their own page in biltong sticks.
