Biltong vs Droëwors: What's the Difference? (One's a Steak, One's a Sausage)
PublishedBiltong vs droëwors comes down to one cut and one grinder. Biltong is whole-muscle beef, cured and air-dried in thick strips, then sliced. Droëwors is minced beef and fat, stuffed into a thin casing and air-dried as a sausage. Same South African cure, same coriander, completely different snack.
Americans usually meet them in that order. Biltong first. Then a South African at the braai hands over a dark, wrinkled stick and says nothing, because the stick does the talking. That stick is droëwors. I grew up in the Cape with both in the same paper bag, so here is the difference between biltong and droëwors from someone who has never once managed to choose just one.
Biltong vs droëwors at a glance
| Biltong | Droëwors | |
|---|---|---|
| What it is | Whole-muscle beef, cured and air-dried | Air-dried beef sausage |
| The meat | Solid cuts like silverside (bottom round) | Minced beef plus beef or mutton fat |
| Shape | Thick strips, sliced after drying | Thin sticks in a sheep casing, about finger-thick |
| Seasoning | Vinegar, salt, coriander, black pepper | The same base, plus clove and nutmeg |
| Drying time | Around 4 to 7 days | Often 3 to 5 days at home, a week or more for some producers |
| Texture | Tender to chewy, like dry-aged steak | Snaps, then crumbles. Richer. |
| Fat | Depends on the cut: lean, or with a rim of fat | Built in. Traditional versions run fatty. |
| What Americans call it | Jerky (wrongly) | A beef stick (also wrongly) |
What is the difference between biltong and droëwors?
Four things, in order of how much they change what ends up in your mouth.
- Whole muscle vs mince. Biltong starts as a solid piece of beef. You can see the grain when you slice it. Droëwors starts in a grinder, which is why it eats like a sausage and biltong eats like steak.
- Fat. With biltong, fat is a choice: you order it lean or with the fat on. With droëwors the fat is mixed in, and it is what makes the stick rich and a little crumbly.
- Spice. Both are built on vinegar, salt, toasted coriander and black pepper. Droëwors adds clove and nutmeg, the same warm spices that go into boerewors. It is the reason a South African can tell them apart blindfolded.
- The casing. Droëwors is stuffed into a thin sheep casing so it dries fast and snaps when you bend it. Biltong wears nothing.
The name tells you most of this. In Afrikaans, droë means dry and wors means sausage. The Dictionary of South African English defines it in five words: air-dried sausage, salted and spiced. You will also see it sold as dry wors or drywors, which is the same thing with the accent sanded off. More on that in how to pronounce droëwors.
How is each one made?
Biltong: whole cuts are sliced along the grain, dipped in vinegar, rubbed with salt and spice, and hung in moving air for days. No oven at any point. The full process is in how biltong is made.
Droëwors is the dried descendant of boerewors, the fat coiled sausage on every South African grill. Beef and fat are minced, seasoned, stuffed into casings and hung to dry until the sticks have lost roughly half their weight. Pork and veal are left out on purpose, because their fat turns rancid when it dries. A 2018 study of South African droëwors measured exactly that: the pork version oxidised several times faster than the rest. If you want to try it yourself, the droëwors recipe has the grams.
Is biltong healthier than droëwors?
It depends who made it, which is an annoying answer and also the true one.
Look at two American-made packs. A 2 oz bag of Ayoba droëwors lists 180 calories, 31 g protein, 5 g fat, 0 g sugar and 700 mg sodium. A 2 oz bag of Kalahari original biltong lists 160 calories, 32 g protein, 4 g fat, 0 g sugar and 780 mg sodium. That is a rounding error, not a health gap.
Traditional South African droëwors is a different animal. That same 2018 study tested 20 commercial samples and found fat between 26% and 33% by weight. So lean, US-style droëwors is about as lean as biltong, and the old-school butcher-counter version is a proper fatty sausage. Read the panel. Either way the thing to watch is sodium, not sugar. The full breakdown is in is droëwors healthy and is biltong healthy.
What does each one taste like?
Biltong is concentrated beef with a vinegar edge and toasted coriander on top. Closer to dry-aged steak than to anything in the jerky aisle.
Droëwors is warmer and rounder. The clove and nutmeg come through, the fat carries the flavour, and the texture goes snap, then crumble. If biltong is the steak, droëwors is the burger that went travelling and came back interesting.
Which one should you try first?
If you like steak, start with biltong. If you grew up on beef sticks and gas-station jerky, droëwors will feel familiar for about one second and then ruin the gas-station version for you. That comparison is its own post: droëwors vs beef sticks.
For a board or a cooler, the honest answer is both. Sliced biltong for picking at, droëwors for snapping in half and handing around. A cold lager does not hurt either one.
Where do chilli bites and the other sticks fit?
Chilli bites are thin strips of biltong dried hard with chilli on them, so they sit on the biltong side of the family, not the sausage side. If that sentence raised more questions than it answered, start with what chilli bites are, then chilli bites vs droëwors, or go straight to the full map in South African meat sticks.
Frequently asked questions
Is droëwors the same as biltong?
No. Biltong is whole-muscle beef that is cured, air-dried and then sliced. Droëwors is minced beef and fat in a thin casing, air-dried as a sausage. They share a cure and a country, not a recipe.
What do Americans call droëwors?
Usually a dried sausage or a beef stick. Neither is quite right, because American beef sticks are fermented or acidified and then cooked, while droëwors is only air-dried.
What meat is best for droëwors?
Beef, with beef or mutton fat. In South Africa it is also made from game such as kudu and springbok. Pork and veal are avoided because their fat goes rancid as it dries.
Is droëwors made from leftover biltong?
No. Droëwors is made from fresh minced beef and fat that is seasoned, stuffed into casings and then dried. It never starts as biltong.
Does droëwors last as long as biltong?
Usually not. The extra fat in droëwors goes stale sooner than lean biltong does, so it is best eaten within days of opening and kept cool and dry.
