Spicy Biltong vs Spicy Jerky: We Read the Labels So You Don't Have To

Published

Spicy biltong beats spicy jerky on sugar and protein. Per ounce, the spicy biltong labels below show 0 g of sugar and 15 to 16 g of protein, against up to 8 g of sugar and 9 to 11 g of protein for popular hot jerky. Sodium is the one place it is closer than you would think, and one sweet-and-hot jerky actually comes in lower.

I am biased. I sell biltong. So rather than tell you it is better, here are the labels, side by side, including the line that does not flatter me.

Spicy biltong vs spicy jerky, per ounce

Per 1 oz (28 g) Protein Sugar Sodium
Ayoba Spicy Biltong About 15.5 g 0 g About 395 mg
Kalahari Spicy Peri Peri Biltong 16 g 0 g About 235 mg
Jack Link's Sweet & Hot Beef Jerky 9 g 8 g (all added) 280 mg
Old Trapper Hot & Spicy Beef Jerky 11 g 6 g 650 mg
Slim Jim Monster Tabasco stick About 5.6 g About 1 g About 495 mg

Ayoba figures converted from its 2 oz pack (180 calories, 31 g protein, 790 mg sodium). Slim Jim converted from its 55 g stick (11 g protein, 2 g sugar, 970 mg sodium). Others are per 1 oz serving as listed. Panels via MyFoodData, Old Trapper and EWG, checked October 2026. Brands reformulate. Trust the bag in your hand over this table.

Why spicy jerky has sugar in it

Heat needs a counterweight, and American jerky reaches for sugar. Read the first five ingredients on Jack Link's Sweet & Hot: beef, water, sugar, brown sugar, sea salt. Old Trapper Hot & Spicy: beef, brown sugar, water, salt, flavorings. The sweetness rounds off the chilli and helps the marinade cling during cooking.

Biltong does not marinate in anything sweet. The cure is vinegar, salt and spice, and the meat is dried in air rather than cooked. The tang of the vinegar does the job sugar does in jerky. It is the single biggest reason the two taste so different, and it is covered in full in biltong vs jerky.

Why biltong carries more protein per ounce

Biltong loses roughly half its weight in water as it dries, and it is made from lean whole muscle with nothing added to bulk it. What is left is concentrated beef. Jerky carries some of its weight as sugar and marinade. Meat sticks such as Slim Jim carry fat, pork and, in Slim Jim's case, mechanically separated chicken and textured soy flour.

Where spicy jerky wins: sodium

Here is the line that does not flatter me. Jack Link's Sweet & Hot lists 280 mg of sodium per ounce, which is lower than one of the two biltongs above. Salt is how biltong is preserved, and drying concentrates it.

The spread inside each category is wider than the gap between them. Kalahari's peri-peri comes in at around 235 mg and Old Trapper at 650 mg. If sodium is what you are watching, read the panel and ignore the category. More on that in how much biltong per day.

What about chilli bites?

Chilli bites are biltong cut thin and dried harder, so per ounce they behave like the biltong above, with two cautions. The harder drying can push sodium up, and many commercial chilli bite spice mixes contain MSG and sometimes sugar. Read the ingredients. If you want them clean, the chilli bites recipe has no MSG and no sugar.

Which is spicier, biltong or jerky?

Neither category is spicier by default. It comes down to how much chilli the maker uses and which one. Spicy biltong tends to taste hotter than sweet-and-hot jerky, because there is no sugar softening the burn. For the Scoville numbers, see how hot is peri-peri biltong.

The verdict

  • Least sugar: spicy biltong. Zero on both labels above.
  • Most protein per ounce: spicy biltong.
  • Lowest sodium: it depends on the brand. Read the panel.
  • Shortest ingredient list: spicy biltong, by a distance.
  • Best with a cold beer while watching the Longhorns: also biltong. That one is not in any lab data. Trust me.

Frequently asked questions

Is spicy biltong healthier than spicy jerky?

On most labels, spicy biltong has no sugar and more protein per ounce than spicy jerky. Sodium varies by brand, so compare the nutrition panels.

Does spicy biltong have sugar?

Traditional spicy biltong has none. The cure is vinegar, salt and spice. Some chilli bites use spice mixes that contain sugar or MSG, so check the ingredient list.

Why does spicy jerky have so much sugar?

Most American spicy jerky is marinated in a sweet sauce before cooking. The sugar balances the heat and helps the seasoning stick to the meat.

Is biltong lower in sodium than jerky?

Not always. Sodium varies more between brands than between biltong and jerky. Some sweet-and-hot jerky is lower in sodium than some spicy biltong.

What is the healthiest spicy meat snack?

Look for a short ingredient list, zero sugar, high protein per ounce and sodium you are comfortable with. Spicy biltong usually wins on the first three.

South African, and biltong is literally half my surname — I grew up on it. Everything here follows my family's recipe from the Cape winelands: if it wouldn't pass there, it doesn't get bagged.
