Venison Droëwors: What to Do With a Texas Deer (Safely)

Published

Venison droëwors is South Africa's air-dried sausage made with game instead of beef, and it is a good home for Texas whitetail. Venison is too lean on its own, so add beef or lamb fat to around 15 to 20% of the mix. One honest warning up front: the traditional method has no cooking step, and US food-safety guidance for home-made venison sausage says it should reach 160°F.

In South Africa, game droëwors is ordinary. Kudu, springbok and gemsbok droëwors sit on butcher counters next to the beef. In Texas, a lot of venison ends up as breakfast sausage and freezer-burnt chili meat. There is a better way to honour a deer, and it fits in a shirt pocket.

When is deer season in Texas?

For 2026–27, Texas Parks and Wildlife lists white-tailed deer archery from October 3 to November 6, 2026, and the general season from November 7, 2026, running to January 3, 2027 in the North Zone and January 17, 2027 in the South Zone. Youth and late seasons sit around those. Check the TPWD season dates for your county before you go. Bag limits and zones are their department, not mine.

Why does venison droëwors need extra fat?

Because deer do not carry much. Droëwors relies on fat for flavour and for the slightly crumbly bite, and an all-venison stick dries into something closer to a pencil than a sausage.

How much to add is where recipes argue. Researchers testing zebra droëwors in a 2021 study tried 10%, 15% and 20% sheep fat and found 15% the most stable against rancidity. Home recipes range from lean (about 5% fat) to the 1 kg venison plus 200 g beef fat school. Somewhere between 15% and 20% is the sweet spot for flavour without shortening the shelf life too much.

Use beef or lamb fat. Never pork. Pork fat goes rancid as it dries, which is why traditional droëwors leaves it out entirely.

How to make venison droëwors

  1. Weigh. 1 kg (2.2 lb) trimmed venison, all silver skin and sinew removed, plus 150 to 200 g beef or lamb fat. Keep everything very cold.
  2. Season. Use the spice quantities from our droëwors recipe, scaled to your weight: toasted coriander, black pepper, clove, nutmeg, salt and vinegar.
  3. Mince. Coarse plate, meat and fat together, then mix in the spice and vinegar until just combined.
  4. Stuff. Thin sheep casings, about 20 to 22 mm. Thin is the point: droëwors is a dunwors, a thin sausage, because thin sticks dry fast.
  5. Dry. Hang in a biltong box or a cool room with moving air for about three to five days, until the sticks have lost roughly half their weight and snap when bent. The box itself is covered in the biltong box guide.
  6. Heat-treat. See the next section. This is the step the old recipes skip.

Is homemade venison droëwors safe?

Here is the honest conflict, and I would rather you hear it from me than from your gut a day later.

Traditional droëwors is never cooked. It relies on salt, vinegar and drying to make it shelf-stable. That works well in a commercial plant with validated processes. At home, with ground wild game, US food-safety guidance does not endorse it:

  • The USDA's home jerky guidance says to heat meat to 160°F before drying, and notes that in venison tests, pathogenic E. coli survived drying for up to 10 hours at up to 145°F.
  • Kansas State Research and Extension's dry meat safely at home guide gives an alternative: after drying, put the pieces in an oven preheated to 275°F for 10 minutes. It also says to avoid making dried meat from a gut-shot animal.
  • Grinding matters. Whatever is on the surface of the meat ends up all the way through a sausage.

So the US-safe version is: make the droëwors traditionally, then give the dried sticks the 275°F, 10-minute oven step. You lose a little of the classic texture. You keep everything else, including your weekend.

Do not feed homemade venison droëwors to anyone pregnant, very young, elderly or immunocompromised. The reasons are in can you eat droëwors when pregnant.

What about CWD in Texas deer?

Chronic wasting disease has been found in parts of Texas. TPWD's precautions for hunters say never to eat the brain, eyes, spinal cord, spleen or lymph nodes of deer, never to eat meat from an animal that looks sick, and to follow carcass disposal rules. If you hunted in or near a CWD zone, getting the animal tested before you turn it into a month of snacks is the sensible move. Heat does not destroy the prions behind CWD, so the oven step does not help here.

Can you make biltong from venison too?

Yes, and in South Africa it is just as common as game droëwors. Venison backstrap and the big muscles of the hind leg make excellent biltong because they are whole and lean. The method is the same as beef: see how biltong is made and the traditional biltong recipe. The same heat-step guidance applies if you follow US home-drying rules.

Frequently asked questions

Can you make droëwors from venison?

Yes. Game droëwors from kudu, springbok and other venison is traditional in South Africa. Venison is lean, so add around 15 to 20% beef or lamb fat.

How much fat should venison droëwors have?

Around 15 to 20% beef or lamb fat. A 2021 study of game droëwors found 15% fat gave the best stability against rancidity. Never use pork fat.

How long does venison droëwors take to dry?

About three to five days in a biltong box or cool room with moving air, until the sticks have lost roughly half their weight and snap when bent.

Do you need to cook venison droëwors?

Traditional droëwors is not cooked, but US home food-safety guidance says dried meat should reach 160°F. Kansas State Extension suggests heating dried pieces in a 275°F oven for 10 minutes.

What is the difference between droëwors and boerewors?

Boerewors is a fresh sausage that is grilled and eaten hot. Droëwors is a thinner sausage with a similar spice blend that is air-dried and eaten as a snack.

This is general information, not food-safety certification. Follow current USDA and extension guidance when processing game at home.

South African, and biltong is literally half my surname — I grew up on it. Everything here follows my family's recipe from the Cape winelands: if it wouldn't pass there, it doesn't get bagged.
